Flourless Chocolate Fudge Cake
One of the most indulgent desserts you can treat yourself to is a decadent chocolate cake made with generous amounts of melted chocolate. This dense, fudgy cake is so rich that it needs no frosting, ensuring convenient portability for on-the-go enjoyment if you’re “bringing along dessert”. Simply serve each slice with dollop of whipped cream and fresh fruit.

Not only is this cake easy to whip up and a treat to eat, but flourless too.
Ingredients
- 220g dark chocolate (70%), broken up
- 110g unsalted butter, cubed
- 200g eggs
- 90g caster sugar
- 60g almond meal
- 60ml buttermilk
Instructions
- Preheat oven to 140°C. Grease and flour a 22cm cake pan, ideally springform. Line the base with baking paper.
- Place chocolate and butter in a double boiler (or heatproof bowl) atop a medium saucepan of shallow simmering water. Note the bowl should not touch the water. Mix until melted and combined.
- Meanwhile, whisk eggs and sugar using a stand mixer on high for a few minutes until light and airy.
- Add almond meal and buttermilk, and also gently fold in the melted chocolate and butter until just combined.
- Pour mixture into the prepared pan. Bake for 60 minutes or until cooked through.
- Remove the cake from the oven and leave it to cool in the tin completely. Carefully release cakes from pans and remove baking paper when ready to serve.
Notes
Serve with whipped cream and seasonal fruit.
