Blueberry Lemonade

A quick and easy refreshing drink to sip over the summer months that combines blueberries and lemons with optional lavender.

Ingredients

Blueberry Simple Syrup
  • 250g blueberries
  • 1 tbsp dried culinary lavender (optional)
  • 85g granulated sugar
  • 1 cup water
Lemonade
  • 4 cups chilled still or sparkling water
  • ½ cup fresh lemon juice

Instructions

For the Blueberry Simple Syrup
  1. Add blueberries, lavender, sugar, and water to a small pot. Stir frequently over high heat. Remove from heat once sugar is completely dissolved and the lavender becomes fragrant.
  2. Once cooled, pour liquid into a blender and blend on high until smooth.
  3. Place a sieve lined generously with muslin over a medium sized bowl. Pour the syrup into the sieve to strain. You can bring the edges of muslin together in your hand to form a kind of sack and gently squeeze to help liquid strain faster.
For the Lemonade
  1. To a large jug, add in the water, lemon juice and syrup. Stir to combine. Serve over ice.
